Greek Pork Kabobs

June 20, 2020 Amanda Plott
greek-grilled-pork9.jpg

These Greek Pork Kabobs are easy-peasy lemon squeezy! Whip up a delicious Greek inspired marinade with a handful of spices, olive oil, and lemon. Skewer and grill. These kabobs can be made well ahead of time and kept in the fridge up until you’re ready to grill and enjoy, making them great for a weeknight meal prep!

There really isn’t any way to keep these kabobs light because they’re naturally lean. I went with a pork tenderloin, but chicken would be a great choice of protein here as well…

Halloumi Summer Lunch

May 3, 2019 Amanda Plott
halloumi-summer-lunch5.jpg

It’s been a strange week, to be sure. Within my family we have seen a birth, a death, and now this weekend a wedding! Needless to say, the emotions have been all over the place - along with my sanity. So, I’ve been keeping things as simple as could be lately. Even in the sense of food!

This Halloumi Summer Lunch is as simple and easy as they can come. Only one thing is cooked, and that’s the halloumi. Don’t know what halloumi is? Well, it’s time to find out! Halloumi is a Greek staple cheese that is generally made with goat’s milk. But, I’ve seen it made with other milks too. Halloumi is a fun cheese. It’s firm, salty, and doesn’t really ever melt…

Spring Vegetable Crudités Plate

April 10, 2019 Amanda Plott
spring-veggie-tray3.jpg

To go along with my Skinny Whipped Feta Dip from yesterday, I decided to make a beautiful plate of Spring veggies! The plate is half Spring inspired and half Mediterranean inspired to go along with the feta dip. Along with the other disable bits, there’s some olives and capers on the plate too.

The plate of Crudités starts off with the Skinny Whipped Feta Dip. Then there’s plenty of slices zucchini, salami, tomatoes, fresh mozzarella, berries, and of course… olives and capers! I’ve made my fair share of plates, trays, and other sorts of sharable appetizers before. But, I have to say that this Spring Vegetable Crudités Plate is well balanced and one of my new faves!…

Skinny Whipped Feta Dip

April 8, 2019 Amanda Plott
whipped-feta-dip7.jpg

The weather here in Texas right now is all over the place. We’ve gone from near freezing, to sunny and 90 degrees, and on further to torrential downpours of rain all in the matter of a couple of days. I almost feel like I should be doing the reverse of a rain dance at this point. But, besides bringing in a plethora of allergens, the weather has left us with an immense amount of Spring flowers this season.

So, I’m pushing on with the Spring inspired recipes. And this Skinny Whipped Feta Dip is topping the charts. To go along with the Spring season, I picked up some Spring inspired essentials. Namely, fresh produce including zucchini, tomatoes, lemon, and dill!…

Greek Pita'za

March 29, 2019 Amanda Plott
greek-pitaza9.jpg

It’s pretty common knowledge that in this house, we have pizza (in one form or another) at least once a week. This time around, I decided to have a little more fun with it than usual. And I even had the aded bonus of having my mini-me chef in the kitchen to help!

As is often the case, I asked my daughter if she wanted to help out with dinner. Surprisingly enough, she actually said yes to me this time! It’s been a long stent of her not wanting to. Good thing I had something simple and easy planned. During these last couple of months ahead of summer, I’m looking for all the hacks on quick and easy eating. And this pita or naan crust pizza is perfect…

Greek Lemon & Chicken Soup

September 28, 2018 Amanda Plott
greek-chicken-soup5.jpg

I really really really didn’t intend to have two soup recipes in a row, but that’s just how it turned out! Initially I made this Greek Lemon & Chicken Soup a week or two back as a test recipe, and it was so good that I just couldn’t help but make it again sooner than later. Especially as we’re rolling on into cooler weather and soup season.

For being a soup, this one is on the lighter and brighter side of the spoon with lemon and feta in it. Which can be a good thing as we travel on into winter and start in with those dreaded winter blues. Eh… who am I kidding? We don’t generally have time in winter to get the winter blues here in Texas, but I know there are some of you that do!…
