Healthified Irish Nachos

Irish nachos get their name from the fact that they are basically like any other traditional 'nacho' except that they are made by using potato rather than tortilla chips, and are often served in any pub along side a beer!

Of course, they are not generally the most healthy option that you can find. With St. Patrick's Day right around the corner, I thought I would give this classic a healthy twist in honor of my Irish heritage...

Skinny Spicy Chicken Sandwich

While fast food is something that I desperately try to stay away from, that doesn't mean there aren't things out there that I want to be in love with. I'd just prefer to find a healthier way to cook them for myself and my family. Case and point... the spicy chicken sandwich.

What I was going for here is sort of a kicked up version of the one that you'll find at almost any chicken joint such as the infamous Chick-fil-a. I wanted something with a little more spice and a lot less calories and fat! And... not fried...

Skinny Apple & Gorgonzola Pizza

We love pizza around here. Seriously it's a staple in our meal plan. I think we have it about once a week in this house. At least. I'd love to blame that on my little girl, but what can I say? I love pizza too. Always have, and always will.

Italian Grinder (On a Stick)

Nearly at every party thrown, there is almost always a plate of prepared sandwiches. Mini subs, silver dollar, tea sandwiches... It doesn't matter which you pick, they are always a hit!

One of my favorite sandwiches is the Italian Grinder. It contains so many of my favorite things. Salami, cheese, peppers... pepperoni, more cheese... Mmm...

Healthified 7 Layer Dip

You know... the term '7 layer dip' always confused me as... I've never actually seen a 7 layer dip with exactly 7 layers. Seriously. Think about it...

Mind boggling, I know.

In any case, this is my healthified take in the traditional party staple dip.

Oh! And don't let the ingredient list scare you away. Most of the items between the tomato layer and the guacamole layer are the same, so there really isn't that much (it just looks intimidating at first.) This is a super easy recipe anyway!...

Skinny 'Game Day' Meatballs

Some of my favorite appetizer style meatballs when I was younger were always the pre-made ones that you toss in the crock pot to simmer with cranberry and chili sauce.

However... canned cranberry sauce has quite a bit of calories to it and pre-made meatballs are not filled with the most health conscious ingredients.
