The great Christmas and New Year dessert debate is in full swing! It seems like every year my Mother and I get into ‘the great debate’ over what cookies and desserts we’re going to be making for the holidays. She likes this. I like that. ‘Tis the season. …Gingerbread season, that is!

Gingerbread is the spice of life, especially as we get closer to Christmas and the New Year. I took a leap of faith last week and ordered some vegan almond ‘egg nog’ from one of my favorite almond milk creators. They’re local here to me in Austin Texas, and while I like the flavor of egg nog… raw egg in my drink sorta… freaks me out a little bit.

So with my vegan almond milk in hand, I decided that I needed some granola to go with it. I’ve made a lot of granola lately. Most of them have been keto-friendly, grain-free, gluten-free, and the like. This one though? This one is more of a traditional oat granola. Though, it’s east enough to make it gluten-free!…

With Thanksgiving over, it’s now time to move on to the next round of Holiday. Christmas is just around the corner, and then it’s New Years! For several years now, my mom and I get together and bake up a few different kinds of cookies together. We each pick a few of our favorites and we make them in tangent to share with friends and family as a fun homemade gift.

Skinny Wildberry 'Toaster Strudel' Pie

This past week I played around a lot in the kitchen and made things fun by turning ‘kid classics’ into sweet treats that kids and adults alike will enjoy. Skinny ‘Homer Simpson’ Donuts to Skinny Strawberry Pop-Tart Cobbler. Another of my favorites from my childhood was Toaster Strudels. And being as I had some phyllo dough in the freezer that needed to be used up, I decided to make a Toaster Strudel Pie.

My favorite flavor of both Pop-Tarts and Toaster Strudel was always ‘wildberry’. Something about the perfect mix of sweet and tang in there. This is obviously not your average pie and it’s surprisingly simple and easy to make with literally a handful of ingredients…

Skinny Cranberry Bliss Bread

I’ve somehow done it, y’all. I’ve somehow managed to wear myself out on pumpkin for a bit. I don’t know how, I don’t know when, and I really don’t like it. But… at least in the meantime while I recuperate, I can play around with cranberries now!

I don’t know about the rest of the country, but here in Austin Texas… the allergies are killing everyone right now. ‘Tis the season, I guess. So while I’m a little under the weather (pun intended) and my throat is aching, I thought it would be a nice time to make a fluffy warm breakfast bread.

Skinny 'Homer Simpson' Donuts

What can I say? I’m inspired by a lot of things in life. Growing up through the 90’s meant a lot of watching The Simpsons. And anytime you watch the show, there’s like a scene with Homer eating a donut. The Simpson donuts are a classic vanilla donut with pink frosting. So, I took one of my old favorite recipes and reworked it into this riff on Skinny 'Homer Simpson' Donuts!

Needless to say, the house smelled heavenly this morning. It’s been a good bit of time since I baked any donuts. So my little girl was tickled pink when she got her heart-shaped donut fix this morning. Even though I don’t think that she fully appreciated that they were ‘Simpson’ donuts…
