We’re all trying to be a lot more mindful about how we are cooking and eating these days. I know that in my house, we’re trying to get as much use as we can out of every item in the pantry and fridge. Very little is allowed to go to waste and using up pantry staples has become the name of the game. Goulash is one of those old-fashioned tried and true recipes that is versatile, easy, and of course… delicious!

Beef Fajita Crustless Quiche

As of midnight tonight, we here in Austin (and surrounding areas) are on official lock down with a ‘shelter in place’ until April 13th. This comes after being under a quarantine mandate for a week or so as well. Being as times are tough for everyone, I’m trying to be super creative in how I use up leftovers and the few pantry staples that I have been able to get my hands on.

Now that Valentine’s day is over, we can move onto the next holiday on the list. St. Patrick’s Day! I say it every year, St. Patrick’s Day is one of my top three holidays. Partly because I’m Irish and partly because it’s my dad’s birthday! Being as my little one strangely loves corned beef, I decided to make some WELL ahead of time, and honestly I’m not sure why I don’t make it more often through the year.

So obviously, I’m not an Italian lady. My roots are a lot Irish and … well, as many others out there, a plethora of other things. That being said, my love of food stems very much so from my fond memories of sitting on my great-grandma’s kitchen counter and watching her cook for hours on end.

Lengthy cooking times tend to be a thing of the past these days, especially with our fancy gadgets like crock pots and pressure cookers.
