Healthified Crock Pot Pulled Pork & Mustard B.B.Q. Sauce

This BBQ sandwich is to-die-for.

The mustard BBQ sauce has quite a kick to it on it's own, but when you combine it with the natural sweetness from the pork... it's a beautiful, beautiful thing.

I'm from Texas, so I'd like to think that I came out of the womb knowing a thing or two about BBQ.

I had suddenly found myself with an overwhelming about of French's mustard that was provided at no cost to me. I was then poised with some serious internal debate. What am I going to do with all this mustard?

Of course, one of my very first thoughts... was BBQ sauce...

Skinny Tomato Pie

A couple of weeks ago my grandma and I were out running errands when we decided to stop at this well known place here in Austin called Kerbey Lane. They are famous for their unique twists on classic foods. As an added perk, they generally pride themselves on using organic and locally grown items in their kitchen.

As luck would have it, we happened to go in the middle of tomato season! While paroosing the ‘Tomato Menu’ I came across an interesting looking item that was marked as ‘Limited Quantity due to Popularity’… so of course that’s what I had to order. Tomato Pie!...

Skinny Cheesy Green Chile Sausage Gravy

A few words that you don't normally see in a description together? Skinny, cheesy, and gravy. But, somehow I've managed to pull it off. This gravy is so full of vegetables and lean sausage that you can absolutely afford the cheese that's in there.

Seriously. This stuff is pretty addicting.

The first time that I made this recipe was last week to go along with my 3 Ingredient Biscuits as a test. I've never made a gravy before, much less one that was healthified or skinny at all. So, I was a bit skeptical that I what I had planned would turn out at all...

Cheeseburger Stuffed Zucchini Boats

I can has cheezburger? Without feeling guilty?! Yes, indeed! We all can.

These stuffed zucchini boats are a perfectly clever way to have a bun-less burger that I find to be a lot more filling and easy to eat than wrapping a patty in a mere lettuce leaf. You get all the satisfaction and flavors of a traditional cheeseburger packaged neatly into a zucchini squash.

Trust me when I say - you won't miss the bun at all!...

3 Ingredient Biscuits

Yes, only 3 ingredients are needed to make these perfectly guilt free biscuits! I can honestly say that I've never made biscuits from scratch before, so I was a little nervous about trying this for the first time. I'm not really sure why I've never made them before. Perhaps I had it in my mind that they were supposed to be daily difficult and taxing. I've made plenty of other breads, rolls, cakes, etc... So why not biscuits?

These were super easy and I was entirely surprised and thrilled with how well they turned out! Especially considering that they only took 3 ingredients and about 10 minutes of preparing. That's it!...
