Originally, I was introduced to soy marinated eggs at a local ramen joint. Of course… I’m not the most confident in my skills to soft boil, peel, and marinate said eggs myself sooo… the next best thing is a hard-boiled version! And I say next best only because these are really just a very different animal all together. The idea is the same though. And the taste is too!

Healthified Turkey Lettuce Wraps

So, here's the thing... I've been making these for a few years now. Lettuce wraps are one of my favorite things to order from P.F. Changs or Pei Wei, mostly because they are sooo delicious and I don't feel quite as guilty eating them as other options on the menu at either place.

Did y'all know that April is National Soy Foods Month? There's probably not a girl out there that love soy anymore than I do either. Crispy Tofu & Roasted Vegetable Buddha Bowl

It's National Soy Foods Month, and I couldn't be more excited. I've been working pretty hard lately to try and meet a more plant based diet. So to celebrate, I've created a perfectly light and flavorful plant powered Buddha bowl!

This Buddha bowl (or Hippie Bowl) has a base of purple cabbage, it's layered on top with roasted vegetables (brussels sprouts, butternut squash, and edamame) and crispy tofu fries that were paired with a perfectly spiced Skinny Sriracha Aioli - perfect for dipping!
