This old post (originally from 2013 - my first year of The Skinny Fork) definitely needed to be updated. It was back from the days when I wasn't yet taking the step-by-step photos of my cooking process. Not that this recipes has all too many steps to begin with, it just needed some polishing up.

It was definitely interesting to go back and see how far I've come with my photography, and also my method of cooking and creating recipes. Healthy & Easy Kid-Friendly Spaghetti Sauce

I'm calling this kid friendly spaghetti sauce because, I generally like to put actual onions and garlic into my spaghetti sauce. However, my little one would turn her nose up at that in a heartbeat, and seeing as how she specifically requests spaghetti every week, I figured that I ought to oblige her with something that would suite her desires!

Besides, who doesn't enjoy eating like a kid again? In my mind, that's one of the perks of being a parent; reliving all the things that you loved when you were growing up!

Though my mom was more of a Hamburger Helper sort of spaghetti maker.

She swears by Hamburger Helper 'Spaghetti' to this very day. Ugh…

Instant Pot Chicken Caldo

Well, it’s still barely winter here in Texas. Though it is about as winter as it’s likely to get here outside of a couple more cold fronts and a freeze or two. Even so! We’re in the throes of soup season and I wanted to make some more soup, DANG IT.

Caldo is one of the most simple soups out there. It’s a Mexican style soup that’s very brothy and full of several different kinds of vegetables. Healthified Crock Pot Kalua Pork

Summer time around here (especially July) is when my mom always likes to throw a mostly annual luau. Unfortunately, she hasn't really been able to do that for the past couple of years, just because they had moved about an hour further away from me and well... all of their friends basically too. Either way, this is one of our family favorite recipes for these such luaus! And with it being nearly July, I thought it would be a great time to update this Kalua Pork with a bit of a facelift.

So, what do you do in Hawaii? You go to a luau. What do they serve at a luau? Kalua pork.

Kalua (as not to be confused with Kahlua) is a traditional way of cooking pork in Hawaii. The word kalua actually translates to 'to cook in an underground oven'. While they use something in Hawaii called an imu for this process, I don't readily have one of those at my disposal... so I used the next best thing. My slow cooker!...

Healthified Crock Pot Turkey Taco Soup

So, one of my most popular recipes has to be my Healthified Crock Pot Chicken Tortilla Soup, which also happens to be a family favorite and has been for many years now. With that being said, I decided to make something similar, but more with the flavors of another favorite; tacos! This Healthified Crock Pot Turkey Taco Soup is going to knock your socks off with it's amazing flavors, even if it wasn't really what I had planned on making today.

Yep! Even I have fails in the kitchen still. My original recipe for today turned out to be a flop. Literally. It flopped straight over into the trash. I don't know what's wrong with me lately! My brain just can't seem to get things going quite as well as it usually does. It feels like I'm on auto pilot. Healthy Crock Pot Chicken Noodle Soup

A little chicken noodle soup for the soul, anyone? 2016 has been a year that will go down in infamy. I don't think this year hasn't touched everyone in a particularly strange (and I'll even dare to say negative) way. I for one, couldn't be more happy to see it in it's last several days. I know that 2016 will go out kicking and screaming the entire way, but I can't wait to see what next year brings.
