Life has been pretty crazy around here lately and it doesn't seem as if things are going to slow down any time soon. With that being said, it's still vastly important to me to feed my family healthy meals from my own kitchen as much as possible while keeping it all rather guilt-free.

You can have a well balanced meal that's quick, filling, and easy to do! These Southwest BBQ Smoked Chicken Tacos are an easy dinner that hits all the important food categories while having great bold flavor.
Flavor doesn't have to be sacrificed because of time.
For these tacos I decided to go with Birds Eye Steamfresh® Flavor Full – Barbeque Sweet Corn. It has the flavor my family craves and the nutrition that I want to give them. All the Birds Eye Full Flavor Vegetables are also low in fat, cholesterol and have 0 grams of trans fat. Plus, they've paired popular vegetables with mouth-watering flavors to form winning combinations.
I also picked up some Farm Rich® Smokehouse Dry Rub Smoked Chicken. The chicken is made with high quality cuts of meat, smoked for hours, and of course is high in protein!
Both of these items made these tacos easy to prepare while saving me time without sacrificing any flavor. I added some black beans and a chopped dry slaw over the top of these tacos for some fresh crunch. Plus, I used a bit of my Homemade Taco Seasoning to jazz up the flavors even more.
As you can see here, I served my tacos with a side of Birds Eye Steamfresh® Flavor Full – Ranch Broccoli just to round out the meal and get a little added green in there.

Ingredients:
1 (16 Oz. Pkg.) Farm Rich® Smokehouse Dry Rub Smoked Chicken
1 (10 Oz. Pkg.) Bird's Eye Steamfresh® Flavor Full – Barbeque Sweet Corn
8 Whole Wheat Tortillas (Mine were 50 cal. each.)
2 C. Chopped Dry Salad/Slaw Mix
1 C. 'No Salt Added' Black Beans, Drained & Rinsed
1/2 Tsp. Taco Seasoning
Directions:
Cook your chicken and corn according to package directions.
If you want, you can also warm your tortillas. I like to do this directly over the flame of my gas stove.
I found everything that I needed for these tacos at my local Walmart. Both the Farm Rich® Smokehouse Dry Rub Smoked Chicken and the Bird's Eye Steamfresh® Flavor Full – Barbeque Sweet Corn can be found in the freezer section.
Top your tortillas with about 1/4 C. chicken followed by 2 Tbsp. of beans.
Add 1/4 C. of the corn over the beans, followed by about 1/4 C. of the dry salad mix.
Serve right away and enjoy.
I topped mine with a little bit of queso fresco and a drizzle of BBQ sauce that I had on hand, but it's really unnecessary.
