Jamaican Chili

So, I wanted some chili but with it being Spring I wanted a chili that maybe had a little more of a brightened up twist to it. That’s why I came across the idea for a Jamaican themed chili. It’s basically a pretty standard meat and bean chili that’s got all the delicious warm and bright flavors that you tend to see in Jamaican dishes.

There is some heat to this chili, but not a whole WHOLE lot. If you want it to be a touch hotter, try using a hotter pepper in place of the jalapeño. Think habanero or scotch bonnet! I’m not quite that brave myself so I stuck with the jalapeño…

What I ended up getting for Easter was an upset stomach. Boo! Oh, well. As soon as it started to settle, I went straight into chicken noodle soup mode. This Homemade Chicken Noodle Soup is exactly what my body needed too. The broth is light and there’s just enough good wholesome chunky bits in there to fill a sore stomach.

Split Pea Soup (Instant Pot)

The stores here in Texas are slowly getting back to normal after our bit of insanity a week ago during the winter storm. That being said, it’s still slim pickings when it comes to a lot of things on the store shelves. Recovery is going to take more time, especially with an entire state in panic. And that’s on top of the anxiety we’ve all had when it comes to food, lockdown, and this virus.

That being said, one thing that I was prettifying confident I could get my hands on was dried split peas. For some crazy reason or another it’s one of the only things you’ll almost always find on the shelves. Even when everything else is long gone. So, the year has already started off a little rough for me, but at least the food is good. This Black-Eyed Peas & Cornbread Dumplings is as comfort food as it gets, and is truly one of the most tasty and delicious ways that I’ve ever gotten to eat black-eyed peas.

I used fresh black-eyed peas here because they cook fast and are perfect for this seasonal dish. That being said, canned ones or home-cooked would work too. I also used a vegetarian sausage because I have one in my house that doesn’t like traditional sausage for reasons. But any kind of sausage, pork, beef, or vegetarian will be just as good here!…

No time to labor over the stove to make dinner? This Instant Pot Loaded Baked Potato Soup is quick and easy to make with almost all of the cook time being hands off in the instant pot. You start this soup off with cooking the bacon and then adding in the potatoes and broth to that. Yep, that’s right. The bacon is loaded into the soup from the very start!

This delicious vegetarian soup is made in no time at all in a pressure cooker. No meat needed. This creamy dreamy mushroom soup is made with just a few staple ingredients and is perfect for busy Fall and Winter evenings for dinner. It’s hearty and warming and is delicious served up all by itself. No side items needed here!

Despite the fact that this soup is creamy, there’s no cream involved! A quick and easy to make roux is what thickens this soup and gives it that creamy-like smooth texture. Generally in the past I’ve made a similar soup to this but with chicken added, but I’ve got to say… I didn’t miss the meat here at all…
