Things are pretty crazy around here right now as I'm sure it is everywhere else. Somewhere between schedules, fitness, and seasonal changes, I seem to have gotten lost and have little to no spare time. With cooler weather starting to roll in, the light changing, and the days getting shorter, I'm all the more ready for fall and the peace and comfort that comes with it. Bring it on.
What puts you more in the mood for fall than a nice warm bowl of soup? Not just any soup though, but cheesy wonderful soup! This broccoli cheese soup is comfort food at it's finest. It's so easy to toss together, tastes amazing, and is full of vegetables. That's right, full of vegetables...
Skinny Turkey Sriracha Meatballs (Crock Pot)
I had this amazing new Stubb's Texas Sriracha Anytime sauce sitting and staring at me for a few days before it finally hit me. As the heat of Texas summer starts to consider winding down, that always means that we're getting back into football season. And what does that mean? Tailgating and homegating foods will be back in action before you know it!
These partly Asian inspired and partly Thai inspired meatballs make for a great part of a meal, but would also be amazing for your next gamely spread as more of an appetizer. Toothpick or pretzel pick friendly grab-n-go snack!
As an added bonus, they can stay warming in a crock pot for several hours (if you can manage to keeping around for that long!)...

So, I've been on the hunt for a good way of making ratatouille lately. I had tried it many many years back when I was a brand new mother. But, it didn't turn out at all the way that I had wanted. It soured my opinion on ratatouille and eggplant for years to come. Eggplant is not my most favorite vegetable, but ratatouille is one way that I will eat it.
I think that I'll eat almost anything if it's got pasta sauce and/or zucchini involved.
A few weeks back, I had tried this recipe out while my grandmother was still visiting. It got rave reviews from around the table. As it turns out, I got an eggplant and an acorn squash in my most recent local produce box, and knew exactly what I wanted to do with it. Another ratatouille!...

I know it's summer, and who could possibly want hot soup when it's 100 degrees outside... but, sometimes you just have to roll ahead with seasonal produce while you can. It's all about corn right now in central Texas, so I wanted to make something a little different that would stand out and make that corn shine.
This corn chowder actually reminds me quite a lot of a loaded baked potato soup, just with a lot less potato and a lot more sweet corn flavor. I got some red potatoes, jalapeño, and chives in my local produce box this week, plus I had some bacon stashed away in my fridge. All of those things instantly made me think to make my twist on on this corn soup...

It was Teacher's Appreciation this week at my little one's school, and the parents all hold an Annual potluck accordingly; serving the teachers breakfast, lunch, and even a dessert. As part of the potluck for the teacher's I decided I wanted to take something that was versatile and well liked by all, shredded barbecue beef!
B.B.Q. anything is a staple around here and it's probably even a law somehow that every Texan is required to eat something barbecued at least once a week. Otherwise you might lose your license to grill. Hah!...

Before I even get started, I should mention that there is a RO*TEL Coupon deal that ends April 6th (while supplies last.) Be sure that you get yours today to use on this amazing game day recipe.
I'm a Texas girl, so RO*TEL is just sort of a part of weekly life here. Whether it's to be used in queso, guacamole, or in something else all together. Today I'm using RO*TEL in a more non-traditional manner and actually incorporating it into a recipe to feed a crowd; a game day crowd that is!
Basket ball playoff games, as well as any other game day in Texas usually consists of lots and lots of appetizer style figner-foods, and today is no different! I'm whipping up some easy Tex-Mex chicken taquitos by using RO*TEL to spice up one of my favorite game day recipes.
Like I said, don't forget to get this RO*TEL Coupon deal while you can! The coupon expires April 6th. Right now, you can buy 3 and get 1 free! Since it expires soon, download it quickly and use it today at Walmart to get your RO*TEL for your game day grub!...
