So while I’m currently out of town on a little mini vacation, it was taco Tuesday before I left. And with things being more than a little crazy around my place, I decided to take the easy route when it came to dinner. Tacos are a staple in our house and well… we stay pretty true to taco Tuesday. I like to shake things up a bit when it comes to tacos. While I LOVE traditional beef tacos, I also like to play around with chicken tacos, vegetarian tacos, etc.

This time around, I went with some verde chicken tacos. And added some of my FAVORITE creamy jalapeño ranch sauce. To make them even more appealing, I had the chicken cook in the instant pot for a dinner that can be made in well under an hour…

Naked Chicken Chile Relleno

Once again, it’s time to get naked y’all! Or… at least ditch the batter and frying with this NAKED Chicken Chile Relleno! Alright - so a few weeks back now, we actually went OUT and ate dinner somewhere. Can you even imagine? At least I’d like to think that it’s obvious that 90% of the food in this house is cooked in my very own kitchen. Occasionally though, I like to take a night off.

This one night in particular, we went to one of my favorite places. A local modern tex-mex influenced place where they put a modern (and usually healthy) twist on their food. Chicken Salad Lunch Box

I was asked for more snack, lunch, and meal prep box ideas - so I’ve been hard at work coming with a couple each week! This Chicken Salad Lunch Box has to be one of my favorites though. Then again, almost anything with chicken salad is a favorite of mine.

For this lunch box, I used the base for my standard chicken salad that I use in my stuffed tomatoes - and made a few adjustments to it according to what I happened to have on hand this time around. Namely swapping the cranberries for raisins, and using pecans for my nut of choice. Other than that, it’s pretty much same ole’ same ole’.

Ah! Okay, I'm going to reveal something about myself here that I never thought I would so bare with me.

I don't know if you've figured it out yet or not, but I'm sort of a closet nerd. I'm a chic geek to the core, and yet hide it well with what I'd like to think is a very 'normal' exterior. In actuality, I go to renaissance faires (in costume), I've been known to role-play, and yes... I'll even play video games (MMO's mostly). Okay, so really just one in particular, but there are others on my rap sheet as well.

If you're close to me, then you know what that game is. Or if you recognize the name of this chili, then you're probably at least just as guilty as I am. The truth of the matter is, I've been a player in World of Warcraft since it's original vanilla beta back when I was in college. Yep, that's how long this game has been around and in my life. True. It’s pretty common knowledge that in this house, we have pizza (in one form or another) at least once a week. This time around, I decided to have a little more fun with it than usual. And I even had the aded bonus of having my mini-me chef in the kitchen to help!

As is often the case, I asked my daughter if she wanted to help out with dinner. Surprisingly enough, she actually said yes to me this time! It’s been a long stent of her not wanting to. Good thing I had something simple and easy planned. During these last couple of months ahead of summer, I’m looking for all the hacks on quick and easy eating.
