Who's busy on the weekday mornings? I am! I am! Morning time is no joke, y'all! I'm the only morning person in the house, so rallying my 6 year old in the morning is exhausting all on it's own. She has literally hid from me to avoid the inevitable morning routine to get her up, out of the house, and off to school.

One way I can manage to soften the blow of the early morning hours is to come up with fun and easy breakfasts that I can lure my daughter (and myself) downstairs with. Cereal? Pancakes? French Toast! This isn't your average french toast thought. How about french toast made out of bagels? Everything is better on a bagel or made with a bagel, even french toast!...

Lightened Up Coffee Cake

So once again I have a confession to make. This past Christmas my mom came over with this coffee cake that she had received as a gift from her boss at work. He got everyone in her office, plus all of their clients one of these coffee cakes. Now... generally I'm not the hugest fan of coffee cake. it's too crumbly and dry for me. However, this coffee cake... holy moly! It was decadent, buttery, and just the perfect amount of sweet. Yum!

I had that cafe from breakfast and dessert for a couple of days. You know, I'm all about plotting yourself those occasional treats. The coffee cake was made by a local Texas bakery which I intend to visit one day since it's only about an hour away. Though I might have to be dragged out by my hair kicking and screaming along the way. Haha...

Baked Eggs & Spinach

I gotta be honest, y'all. I don't feel my best today physically. One of my glands in my neck is huge and swollen and I'm fighting off an optical migraine. So, bare with me! We'll get through this together!

Funny enough, this meal right here has managed to perk me up quite a bit. I'm not feeling as horrible as I did earlier. Maybe part of my problem is that I was hangry? You know... when you're so hungry that you get angry?

When I'm feeling under the weather, I tend to stick to the simple and easy recipes that I know and love. Now, a while back I had made these Italian Baked Eggs. They were new and different and exciting, and I absolutely loved them...

Broccoli & Butternut Squash Omelettata

Brrrr! It's freezing here in Austin today. No, like... literally it is. I needed an excuse to turn the oven on since that always helps warm the house up and I sure enough found that excuse when trying to figure out what I was going to do with myself for breakfast. I remembered that I had gotten these wonderful farm fresh eggs and local produce yesterday and just knew they would fit the bill.

So, I kicked on my oven and got to work.

I've made an omelettata before, but it's been a while. Almost a year to the day actually! It's pretty funny how things work out sometimes...

It's that crazy time of year when it just doesn't seem like there's enough hours in the day! I'm busy shopping, wrapping, decorating, and getting everything in order for Christmas and New Years. It's day one of having my little girl home and officially off of school for the holidays and I could not be more excited! On top of all of the holiday fun and festivities, she's started getting her 6 year molars and her first 'big girl' tooth. Looks like the tooth fairy will be stopping by in the next month or so!
