Hawaiian Lunchbox

August 13, 2019 Amanda Plott
hawaiian-lunchbox8.jpg

So back about a week ago when I was off on my ‘girls camping trip’ we all stopped by a local grocery store there. They happened to be handing out samples of some new ‘aloha turkey’ in the deli section which you KNOW I immediately fell in love with. I knew pretty much instantly that I was going to have to get my hands on some of that turkey once I got home and to make something fun with it.

There you go! That’s the inspiration behind this Hawaiian Lunchbox!…

Egg Drop Soup

July 13, 2019 Amanda Plott
egg-drop-soup7.jpg

I love takeout food just as much as the next girl. But, I don’t like the way it makes me feel, how much it costs, nor the fact that I have no idea what’s actually in it or who’s prepared it. That’s why I LOVE to make takeout fake outs. This Egg Drop Soup is literally better than what you can get as takeout from just about anywhere.

One of the best parts is that this soup, as delicious as it is, only takes about 10 minutes to make from start to finish. And you have complete control over what’s going into it and how it’s seasoned. Plus, it’s a perfect low carb Asian style soup to pair up for an easy weeknight meal…

It’s no secret that I’m keeping things simple lately. As I’ve pointed out a few times over the past week or two. And let me just say, there is nothing wrong with that. Maybe I’m getting ready for the long lazy days of summer. Maybe I’m just at the end of the school year with my kiddo and am on shut down mode. Who’s to say? It’s also no secret that I LOVE Smithfield® marinated fresh pork.

Put the two together and you get this awesome Banh Mi Bowl! With less than 10 ingredients and well under 30 minutes of time, you can have this delicious and refreshing meal in a bowl ready to go. Bowls like this one are going to be my summer staple. Grilling outside keeps the heat out of my house and the rest of it is cool, crisp, and perfect for the hot days heading my way here in Texas…

Spring Onion & Mushroom Steamed Dumplings

April 21, 2019 Amanda Plott
mushroom-onion-dumplings12.jpg

With one of my little brothers coming into town this weekend from Colorado, I thought I would be a good sister and surprise him with food. That’s usually what I do for my guests. Shocking, I know. I wanted to surprise him with some of his favorites. And Asian food has always been one of his favorites. And being as he could eat vegetarian at almost every meal if it were left up to him, I thought I would make him some vegetarian steamed dumplings.

Hey, I’ll look for any chance I can to use my bamboo steamer. So, I got to work with planning out these dumplings. I decided to stuff them with one of my favorite veggie swaps. Mushrooms!…

Egg Roll Soup

November 19, 2018 Amanda Plott
egg-roll-soup9.jpg

If you like egg rolls, and you like soup, then this is the soup for you! Remember a while back when I made that Egg Roll Bowl? Well, this is sort of a winter-ized take on that. It’s an egg roll that’s been turned into a soup!

Yes, all the flavors and components of a good egg roll are here in this soup; including onions, cabbage, carrots, and meat. Even though I made my last egg roll recipe with chicken, I decided to go with turkey this time around. This was for no other reason than texture. It’s low-carb, gluten-free, and ridiculously easy to make all in one pot…

Chicken Faux Pho (Instant Pot)

July 31, 2018 Amanda Plott
faux-pho8.jpg

For a good long while now I've heard nothing but good things about pho. And to be honest, I've never given it a try. My brother swears by it and about the time that my hair stylist said the same thing, I knew it was going to have to happen. So, when I was planning out my meals for the week, I decided that I was going to dive head first in and make a quick and easy version of pho.

...And let me just tell you... it's pho-king delicious.

This pho isn't what I would call traditional. It hasn't spent all day cooking down in it's broth, and the ingredients are pretty minimal. The most of what's going on here is spices and fresh veggies - which I am anything but mad at…
