Chickpea Tikka Masala

Let’s face it, we’re all suddenly a lot more influenced by a ‘beans and rice’ diet. Pantry cooking can be tricky, but it can also save time, money, and still be pretty damn healthy for you. This Chickpea Tikka Masala is a one pot dish that cooks up in just about 30 minutes. It’s gluten free, vegan, and vegetarian. Plus, like I said, one pan to cook it all means less mess to clean up in the end.

Chickpeas are a favorite among my family as it is. Seriously… there’s a few of us that would eat the things straight of the can if someone would let us. So, I try to use them as much as I can. And they work out really well in vegetarian dishes…

Skinny Italian Beef Sandwiches

Oh, man... the history behind this recipe dates back around 6 years ago. It was right around the time that my daughter was born when I first started to make it. This was one of the first real things that I cooked for my family, and it is also one of the things they still ask me to make. Yep. Even to this very day! The recipe originated on a website that sadly is no longer around. The same website that started me off on my better-for-you cooking style.

Originally the recipe called for the beef be cooked in the slow cooker, but today it was a little chilly and I felt like blowing the dust off of my oven for the coming cold-weather season. Yay! I'm finally getting to use my oven again. Thank. Goodness. It's about time!...

It's the first day of fall, y'all! I couldn't be happier. Here in Texas, we're finally getting a 'cold front' in this week that will get us into the 70's at least. Phew. It's been a hot few weeks, so I'm ready for the cooler weather. I'm also loving that I'm starting to see winter vegetables coming in.

I happened to get my hands on a local acorn squash and thought it would make a great addition to a fall style ratatouille; in place of eggplant since I am not a huge fan of eggplant unless it's entirely hidden in whatever it is I'm eating. Hey! With back-to-school just around the corner and the end of summer breathing down my back with an ever tightening schedule, this easy one pot meal is just what I needed! Why a one pot meal? It keeps things simple. I'm left with one dirty dish and plenty of happy, full tummies at the end of the night. What's better is that I only need to focus on one pot for cooking. Yay!

One Skillet Cheesy Tortellini Lasagna

Tortellini are one of my most favorite things in the world. I will eat them plain, sauced, cold, hot, and filled with just about anything. This dish is amazingly delicious and so super easy to make. Plus, you only end up dirty one pot for the entire cooking process. That's right! The tortellini are cooked up right there in the sauce before being topped with cheesy ricotta goodness.

I'll admit it. I've been on a bit of a ricotta kick lately with making two different kinds of gnocchi and finding anywhere else in my cooking to use up what is now one of my favorite cheeses.
