Summertime always makes me think of strawberries. I always have plenty of them in the fridge during the hot summer months, mostly because myself and my daughter go through them in mass quantities. I love strawberries so much so that I even often add them to cereal at breakfast. So I thought, why not base a warm summer breakfast cereal off of that?

This Summer Strawberry & Coconut Breakfast Cereal is easy, tasty and light. Making it the perfect summertime breakfast bowl. I like to make a batch of it ahead of time to have on hand for a good three days worth of breakfast bliss that keeps me strong, full, and on track with my health goals.

The Skinny:
Servings: 3 • Size: About 1 1/2 Cup • Calories: 286 • Fat: 9 g • Saturated Fat: 4 g • Carb: 42 g • Fiber: 5 g • Protein: 8 g • Sugar: 4 g • Sodium: 24 mg

Ingredients:
1 C. Village Harvest Organic Ancient Grain Blend
1 C. Water
1 C. Light Coconut Milk
1 Tbsp. Natural Sweetener
12 Strawberries, Sliced

Optional Toppings: 50/50 Honey or agave drizzle, Coconut Chips, and more coconut milk!

Directions:

Place 1 C. Village Harvest Organic Ancient Grain Blend, 1 C. Water and 1 C. Light Coconut Milk into a medium pot and bring it to a boil over medium-high heat.

Once it reaches a boil, cover and reduce the heat to low to simmer for about 12 minutes or until all of the liquid has been absorbed.

Divide the cereal evenly among bowls.

Top the cereal with the strawberries and any desire optional toppings such as coconut chips, honey, or more coconut milk.

Enjoy right away and store any leftovers or 'meal prep' in an airtight container in the fridge to eat cold or reheat later!
