Skinny Baked Funfetti 'Cake Batter' Oatmeal
Back when I originally made this, my amazing little girl wass turning 4 years old the very next day and I could hardly believe how fast time was flying! Today, she’s a month into 10! One of her most favorite things in the world when she was little (and still is today) are sprinkles. Every year for her birthday I always try to come up with a 'sprinkle' heavy (funfetti) dish in her honor.
Well, alright... so funfetti and sprinkles are a few of my most favorite things in the world as well. I mean... what's better than eating a rainbow? I like to imagine that it appeases my inner child for a while.
One thing my little love doesn't like is oatmeal in any form or fashion. Not even as a granola bar. So, I had the notion that perhaps if I added a ton of sprinkles to some oatmeal... she might be a little more receptive to the blissful breakfast treat that I am so fond of.
Much to my dismay, she didn't find this birthday oatmeal to be humorous or appealing. The others in the house here found the oatmeal to be quite delightful; a bowl full of happy!

Just as the child has changed in the past 6 years, so has this recipe! I’ve altered it and changed it up to better reflect my current, and more knowledgable, tastes in food.
