Coconut Water & Mixed Berry Popsicles

It's starting to get really hot here, and I've been busy starting to come up with healthy and refreshing ways to stay cool in the summer heat as it rears it's ugly head. Never mind that I'm dying here already and we have another 10+ degrees to go until we're really in the prime of Texas summer. Ugh.

So uhm... a whole popsicle for 30ish calories? Yes, please!

Stuffed Breakfast Peppers

I've made Baked Egg and Avocado Bowls before, which are amazing, but I am also a fan of stuffed peppers. So, I figured... why not use the same idea and stuff peppers as a healthy low cab breakfast option? Of course!

These peppers are super easy to toss together and taste great. I was a little surprised with how filling and satisfying these were. I'm generally a carbivore in the morning.

Yes. That's right. A carbivore.

You know, similar to a carnivore... but with carbs rather than meat.

Skinny Cheesy Green Chile Sausage Gravy

A few words that you don't normally see in a description together? Skinny, cheesy, and gravy. But, somehow I've managed to pull it off. This gravy is so full of vegetables and lean sausage that you can absolutely afford the cheese that's in there.

Seriously. This stuff is pretty addicting.

Cheeseburger Stuffed Zucchini Boats

I can has cheezburger? Without feeling guilty?! Yes, indeed! We all can.

These stuffed zucchini boats are a perfectly clever way to have a bun-less burger that I find to be a lot more filling and easy to eat than wrapping a patty in a mere lettuce leaf. You get all the satisfaction and flavors of a traditional cheeseburger packaged neatly into a zucchini squash.

Strawberry Caprese Salad

Sometimes, you just have to step outside the box for a moment to find something truly amazing.

I have always loved caprese salads, and I have also always loved the combination of strawberries and balsamic vinegar... So, why not put the two together? While the pairing might seem a little odd to some, I promise this is sure to surprise and de{light}!

There's just something about the mixture of sweet juicy strawberries and the twang of balsamic vinegar that goes so perfectly together. I guess you could say, it's sort of a play on the whole 'sweet and sour' thing...

3 Ingredient Biscuits

Yes, only 3 ingredients are needed to make these perfectly guilt free biscuits! I can honestly say that I've never made biscuits from scratch before, so I was a little nervous about trying this for the first time. I'm not really sure why I've never made them before. Perhaps I had it in my mind that they were supposed to be daily difficult and taxing. I've made plenty of other breads, rolls, cakes, etc... So why not biscuits?

These were super easy and I was entirely surprised and thrilled with how well they turned out! Especially considering that they only took 3 ingredients and about 10 minutes of preparing. That's it!...
