Steak on a Stick

A month or two back I was whisked away off to a magical land of mystery and whimsey, otherwise known as the Sherwood Forrest Faire. While there I was enticed to try meat-on-a-stick for lunch. I was somewhat skeptical at first but after the first bit I was enchanted. It was amazing! As a side, the meat-on-a-stick could come with a baked potato loaded with butter, sour cream, pesto and parmesan. Also... To. Die For.

The meat on a stick was a thicker piece of what appeared to be flank steak, grilled with some mystical yellow seasoning that I could only fathom was turmeric. So, I went on a hunt as soon as I got home...

Roast Beef & Asparagus Roll-ups

I love asparagus. I seriously cannot wait for asparagus to come into season every year! Unfortunately, I am the only one under my roof that does enjoy it... as a result, most of my asparagus recipes will be intended for one or two servings.

The idea behind this recipe actually started with my mom a year or two ago. She had mentioned to me about how she had been wrapping roast beef around sautéed asparagus as a healthy sort of snack...

Skinny Shepherd's Pie

I'm irish and... rather proud of it. Even so, the first time I ever had Shepherd's Pie was when I cooked it for myself. It was a rather easy recipe to prepare and of course goes along famously with St. Patrick's Day.

Now, I've never been to Ireland, so I can't really say whether this is a traditional style variation or not. Though from what I can tell, every recipe seems to be different - just with the basic idea that meat and vegetables make up the bottom layer while potatoes of some sort are spread over the top...

Skinny 'Game Day' Meatballs

Some of my favorite appetizer style meatballs when I was younger were always the pre-made ones that you toss in the crock pot to simmer with cranberry and chili sauce.

However... canned cranberry sauce has quite a bit of calories to it and pre-made meatballs are not filled with the most health conscious ingredients.

So, this is my take on that game day classic!...

Skinny Baked Bacon Cheeseburger Egg Rolls

This is exactly the sort of fun thing that happens when I cook from my pantry.

I make a set meal plan every week for breakfast, lunch, and dinners. But somehow... by the end of the week, plans have inevitably changed. After a few weeks I end up with a handful of odds and ends from meals that either never happened or were converted into something else for whatever reason.

At any rate, I had a full pound of burger meat in my freezer that needed to have something done with it, and no buns. I also had some egg roll wrappers that I had intended for another use, but somehow managed to remain sitting in my fridge. I also had two lonely slices of cooked reduced sodium bacon sitting aside as leftovers from breakfast.

What's a girl to do...?...

Red Wine Beef Stew

When I was growing up, it was all about my mom's infamous beef pot roast. I can't ever recall us having any beef stew though. When I asked her why she never made it, she said it was 'just something she wasn't too fond of'.

Well, I've managed to change her mind with this recipe.

My picky brother even gave me a thumbs-up for this stew! And... I think I only got a thumbs-up because he was busy stuffing his face with the other hand...
