Happy belated St. Patrick's Day, y'all! Of course, I couldn't leave you all weekend without getting these Guinness Meatballs out here for everyone to enjoy. And now... what's a girl supposed to do with leftover beer? Especially an Irish Stout?

Well, if you're looking for a last minute end of the weekend St. Patty's Day meal (or appetizer), or just have some leftover Guinness on hand, then this is for you! These Guinness Meatballs couldn't be any quicker or easy to make; merely mix, roll, and toss them into a pressure cooker with that Healthified Guinness BBQ Sauce for a few minutes and BOOM you're done...

Instant Pot Corned Beef & Cabbage

By now we all should be well aware of the fact that I am completely smitten with two things; my Instant Pot and St. Patrick's Day. So, this week I thought... why not put the two together? But could it be done? I've made my fair share of corned beef before and I thought it would be the perfect Irish bite to go from crockpot to Instant Pot.

I did have one concern and that was if the corned beef would turn out as tender being cooked in the Instant Pot rather than low and slow all day in the crockpot. And the answer is a resounding... YES!...

My mom has this infamous chili recipe that she's made for many years now. It's something that the whole family can agree on. We all love it. It always became a staple in the family's weekly meal plan during the cooler winter months.

I've wanted to post the recipe for a long while now, well pretty much ever since I started all this... but, it just never came to be for one reason or another. In fact, I never even had the recipe in my hot little hand until about a week ago...

Just because the holidays are over doesn't mean that the entertaining has stopped. At least, that's how it is around my place. I like to think of my house as the central hub. The neutral territory. THE place to be. At least once a week there is something going on and I've got a house full of people.

My daughter and I are usually outnumbered by the boys too. Even when my mom comes to visit, if you're counting the animals, we're still outnumbered by at least 2 to 1. The New Year is on the horizon and I couldn't be more excited! I've got my brother and my nephew in town visiting and one thing that my brother requested I make for dinner one night while he's here is Beef Stew! Now, I've made my fair share of beef stews in the past but since we're out and about this weekend I figured I would make a simple crock pot version.
