I don't know about the rest of you, but my life is still in chaos with Easter now being over and the summer fast approaching. Sometimes all I can do is a quick throw-together dinner that's in, out and done. That's why lately, I've been really geared towards 'sheet pan' dinners. The idea of a sheet pan dinner is simple, you toss dinner onto a sheet pan and bake it in the oven until it's one. No fuss. No Mess. One pan dinner.

Now that's what I'm taking about.

This Parmesan Pork Chop Sheet Pan Dinner couldn't be any more easy to prepare (really you're just chopping up veggies here.) Nor could it be any quicker to cook with merely 30-45 minutes of bake time. It's absolutely perfect for those busy weeknights!

That's one weeknight meal that I'm definitely going to have to try soon!

With such few ingredients and little effort, this Parmesan Pork Chop Sheet Pan Dinner is full of flavor. If you wanted to take it a step further, feel free to serve it with some Skinny Honey Mustard Salad Dressing (one of my favorites) for dipping the vegetables and maybe even the meat! It would make a pretty tasty marinade too.

The Skinny:
Servings: 4 • Size: About 1 Chop + Veggies • Calories: 488.5 • Fat: 33 g • Saturated Fat: 9.5 • Carb: 23.2 g • Fiber: 5.7 g • Protein: 24.3 g • Sugar: 5.9 g • Sodium: 622 mg

Ingredients:
2 Tbsp. Light Butter
4 Medium Carrots, Cut into Spears or Sliced
1 Red Onion, Sliced
3 Zucchini/Yellow Squash, Cut into Spears
5 Oz. Brussels Sprouts, Halved/Quartered
5 Oz. Radishes, Halved/Quartered
1 Lb. Smithfield All Natural Bone-in Pork Chops
3 Tbsp. Dijon Mustard
3 Tbsp. Grated Parmesan Cheese
3 Tbsp. Panko 'Japanese Style' Bread Crumbs

Directions:
Preheat the oven to 350 degrees F. and cover a large sheet pan with foil and lightly coat it with some non-stick cooking spray.

Place the 2 Tbsp. butter and all of the veggies onto the sheet pan and season with some salt and pepper to taste.

Top the veggies with the 1 Lb. Smithfield All Natural Bone-in Pork Chops.

I just rested the chops over the top of the veggies.

Spread the 3 Tbsp. dijon mustard evenly over the meat.

Top the dijon with about 1 Tbsp. of the Parmesan and 1 Tbsp. of the Panko (depending on how many chops you got in for 1 Lb.)

Place the sheet pan into the preheated oven and bake for about 45 minutes or until the pork is cooked through to temperature.

Remove the pan from the oven, divide everything evenly among plates and enjoy right away!
