Healthified Turkey Cuban Sandwich

I'm always on the lookout around Thanksgiving for recipes that I can use up my leftover turkey, and a lighter cuban sandwich is a perfect way to do just that! Don't know what a cuban sandwich is? Well, it's a wonderfully tasty little sandwich that is generally made with roasted pork, ham, swiss cheese, pickles and mustard on some rather hardy cuban bread. Supposedly the sandwich originated in one of my most favorite places in the world - Key West, Florida!

Since, once again this year, I will not be making my traditional Thanksgiving meal, I've been doing my part it making turkey ahead of time; as if I need to get my quota for eating turkey in before the year is up. Then again, I tend to cook with turkey all year long since it's one of my favorite lean meats.

I basically lightened this sandwich up by using a light whole wheat bread, reduced fat cheese, and swapped out that roasted pork for roasted turkey instead. Ta-da! A perfectly healthified take on a cuban sandwich with all the flavor and yet way more healthy than the traditional.

What can I say? I'm an Austinite. Traditional is slowly being removed from my vocabulary.

Oh, and if you happen to have any leftover cranberry sauce, feel free to put a little smear of that on the bread along with the mustard just to tickle those tastebuds a bit more.

I served my sandwich along some veggie chips and had myself a perfect lunch. De{light}full!

The Skinny:
Servings: 1 • Size: 1 Sandwich • Calories: 263.3 • Fat: 8.2 g • Carb: 23.4 g • Fiber: 5.2 g • Protein: 28.2 g • Sugar: 4 g • Sodium: 1111 mg

Ingredients:
2 Slices Whole Wheat Bread (Mine were 40 cal. per slice.)
2 Oz. Roasted Turkey, Sliced Thin (Use leftovers!)
2 Oz. Reduced Sodium Deli Ham, Sliced Thin
1 Swiss Cheese Slice (I used Kraft 'Extra Thin'.)
2 Stacker Pickles
1 Tsp. Yellow Mustard

Directions:

Put your sandwich together accordingly.

Lightly coat the inside of a sandwich press or indoor grill with non-stick cooking spray.

Carefully transfer the sandwich to the heat source and cook until the cheese has melted and the bread is crisp and browned.

Once done, remove the sandwich from the heat, cut in half, and plate.

Serve warm and enjoy!
