Strawberry Shortcake Waffles
I’ve made strawberry waffles before, but I was in a bit of a rush today so I thought instead of making them from scratch, I’d save some time with a box mix. Also, there’s a trick to packing as much strawberry goodness into baked goods as possible without adding moisture and that’s by way of powder!
I added plenty of dried strawberry powder to my favorite protein packed waffle mix along with some vanilla to doctor it up as well. Now, what really makes this strawberry shortcake waffles is the crumble. It’s the same crumble that they use on those strawberry shortcake ice creams from childhood. You know the ones.
Being as these are made with a box mix, there really isn’t a whole lot to do to lighten them up any more since the mix already calls for minimal oil and some water. I did make sure that my strawberry powder was pure and made with only dried strawberries. No added colors or flavoring.
I found the strawberry shortcake crumbles online and have used them for a handful of similar recipes - including a fabulous monkey bread!
