This time around I was feeling chips and dip, but I wanted something with a little bit of a twist to it. That’s where this Poblano Chicken Alfredo Dip comes in. The spice level on this dip varies, depending a lot on how spicy your pepper ends up being. Mine was really tame which is why I ended up also using a little bit of pepper jack cheese too. And even then, it was still pretty mild.
This twist on a classic dip is creamy, flavorful, and healthier than the original. Instead of using heavy cream and tons of cheese, this version a remade light alfredo sauce. The addition of poblano peppers and chicken gives the dip more depth of flavor and a boost of protein.
