Mediterranean Feta & Lemon Chicken
This Mediterranean Feta & Lemon Chicken is packed full of flavor and it’s all to do with the lovely marinade that it sits in for just thirty minutes. Only good, clean, and fresh ingredients go into it too. I don’t know about anyone else, but I can’t say no to a good feta cheese dish anyway and this chicken is just about as good as it gets.
Being as the ingredients here are super simple, there isn’t a whole lot to do here to lighten this up other than by using a fat free cheese, which is exactly what i did. I also used boneless skinless chicken breast and it was fantastic.
I’m not generally a big fan of fresh parsley, but I did really love it here with the feta on top and the squeeze of a lemon wedge over the top to really cut through the fresh parsley a bit. For this I used large chicken breasts, but you could also go with cutlets.
I served mine with herbed pearled couscous and some sautéed baby spinach to a full and complete meal that was scarfed up in no time at all!
