Galaxy Roll Cake
Despite the trying times, the word is still turning and life continues. What does that mean? I’m in the thick of it being pretty much everyone in my direct families birthday time. There’s about a three month segment of time in the summer that houses somewhere about 9 birthdays. This week? It’s not only my dad’s, and mine, it’s also Father’s Day! And that’s not to mention the next week!
Even with a touch-and-go grocery shopping situation, I was still able to come up with this bad ass cake. Since it also happens to be ‘Area 51’ week for my kiddo in out ‘fun weeks of summer’, I decided to make this out-of-this-word Galaxy Roll Cake.
The cake here is pretty simple. A vanilla cake base that’s colored with black, blue, teal, and green and then swirled together before baking. Once that’s done, it’s rolled up with a whipped cream cheese frosting. Finally, it’s topped off with a simple homemade chocolate ganache that’s made a little darker with the help of black food coloring again.
I’ll admit, I was a little fearful of black food coloring but I used very little and in the end I was really happy that I used it. The color added so much depth to the ganache! Over the top of everything I used a special ‘outer space’ sprinkle mix.
