Skinny Peaches & Cream Baked Oatmeal

Peaches are a big thing around here during the summer. Even though this summer is a little different, there’s still plenty of peaches to go around. So when I got my hands on some fresh local peaches, I wanted to be sure to do something worthy with them. That’s where this Skinny Peaches & Cream Baked Oatmeal comes in.

I used the base for my Baked Amish Overnight Oatmeal for this one. It’s a tried and true recipe that is easy to make, and perfect to have ready to go in the busy mornings. Instead of leaving it ‘as is’, I loaded the oats with pieces of diced fresh peach.

The oatmeal itself is already lightened up, so there were no changes there. And honestly, you could use as many or as few peaches as you want. I stuck with a cup and then added some fresh peaches to the side for a complete breakfast.

This Skinny Peaches & Cream Baked Oatmeal does take overnight to sit in the fridge and soak up all the peaches and cream goodness. You then bake it next morning for a quick 30 minutes or so to end up with a perfectly peachy breakfast bite.
