Baked Cheesy BBQ Chicken

Dinner truly doesn’t get more simple or easy than this Baked Cheesy BBQ Chicken. With just a handful of ingredients you can have the main part of dinner done and ready to go. It’s basic. Simple. Easy. And cheesy! To start this easy dinner off, you mix up some BBQ sauce with a little extra garlic goodness.

After that you marinate, if you have time, and then bake it until it’s almost done. It’s then topped off with cheese, red onion, and some pickled jalapeños to give just a little kick! I lightened this up by using a reduced fat cheese, but other than that there really isn’t much else to do since there’s so few ingredients.

I served mine with some sautéed green beans and Salt & Vinegar Fingerling Potatoes for a well rounded and complete meal, but this chicken would also be good with a side salad or even as PART of a nice dinner salad.

Feel free to use your favorite BBQ sauce here or even make your own. I went with some that I needed to use up out of my fridge, but whatever you like will work here.
