Air Fryer Breakfast Egg Rolls

Who doesn’t like a fun take on breakfast? These Air Fryer Breakfast Egg Rolls are all your favorite parts of breakfast rolled up and air fried to perfection. Bacon, sausage, egg, cheese - like I said, all the things you know and love about breakfast in one bite! I’ve made something similar to these before, but it included some gravy for dipping and I really wanted these to be able to stand alone as well as be more of a grab-and-go thing.

These end up super crispy and actually reheat pretty well if you make them ahead of time. You can just pop them in a toaster oven to reheat and eat. If you have any leftover that is.

I lightened these up by firstly using the air fryer rather than actually frying them. I also swapped in some egg whites and cottage cheese for a few of the whole eggs. Cottage cheese might sound a little scary, but I promise you won’t know it’s there AND it actually helps to make the eggs more light and fluffy when cooked!

Other than that, I used a low sodium center cut bacon and reduced fat cheddar. You can’t go wrong with either since you get the same great taste with a lot less calories on the back end which means you get more bang for your buck.
