If there's one thing that we all know and love, it's raw cookie dough. I know that when I was little, I must have eaten my weight in the stuff. And I couldn't even begin to tell you the amount of beaters that I licked or bowls that my mom let me scrape the remnants out of.
These days though, it's a whole other story. I rarely ever let my daughter 'lick the beaters', especially when there's raw egg involved. The thought of it just sends my head spinning. Thank goodness she doesn't like the texture of raw cookie dough or cake batter or I'd be in a lot more trouble!
Even so, every time that I make baked goods that childhood inclination comes creeping in.
To eat and risk it, or not to eat and be sad...
I've made edible cookie dough before. Okay, okay. I've made it a lot more than I should have. This time around, I decided to make the edible cookie dough into bites rather than a mere dough. I've found that it helps to keep me honest with just how much I've eaten of it!
I left this batch as 'sugar cookie' flavor, so they are plain other than the addition of colored sugar and sprinkles. These tasty little dessert bites are delicious and taste just like the real thing - minus the risk of salmonella mind you. I've also made them a little better-for-you by using whole wheat white flour, light butter, greek yogurt, and even halved the sugar content.
The overall consistency of these the day I made them was that of a fresh batch of dough while a day after chilling they firmed up a bit and were more like a cake ball. Either way, they are just as tasty!
With Valentine's Day just around the corner, I was sure to bust out the red and pink colored sugar while getting a new container of festive mini heart sprinkles. And I had to get a little bit of gold pearl dust in there because, who doesn't want to eat gold? These could be easily decorated accordingly for any holiday or special event... or even just because.
All in all, these could be dangerous to have around al the time. You're welcome, and I'm sorry.
Skinny Sugar Cookie Bites

The Skinny:
Servings: 20 • Size: 1 'Bite' • Calories: 78.1 • Fat: 2.6 g • Carb: 12.1 g • Fiber: 1.3 g • Protein: 2.2 g • Sugar: 3.7 g • Sodium: 39.3 mg
Ingredients:
1 2/3 C. White Whole Wheat Flour
1/2 C. Light Butter
1/3 C. Sugar
1/3 C. Natural Sweetener
6 Oz. Plain Fat Free Greek Yogurt
1 Tsp. Vanilla Extract
1/8 Tsp. Almond Extract
Optional: Colored Sugar or Sprinkles for decoration!
Directions:
Beat everything together in a large bowl until well blended.
Scoop out about 1 tbsp. of the dough out at a time and roll into a ball.
I used my 1" metal scoop to do this.
Roll the ball around in sugar or sprinkles if desired for decoration.
Enjoy right away or store in an air-tight container in the fridge for up to three days. Yum!
