Fall is nearly upon us and I am so excited to start working with the amazing flavors of the new season while preparing for the (hopefully) cooler weather to come.
Pumpkin is one of my favorite things to work with in the fall. It's such a versatile fruit! It can be used for breakfast, lunch, or dinner. Sweet, savory, or otherwise!
Why use pumpkin in your baking?
You don't need to add any oil, eggs, or butter! That's right, pure pumpkin puree adds in so much moisture that none of those fattening ingredients are required.
Pumpkin is high in fiber and low in calories. Plus, the flavor of pumpkin is mild on it's own. You might not even guess it was there if you didn't know otherwise!
I did add some pumpkin pie spice to make these even more 'fall friendly' for the tastebuds, but you definitely don't have to if you don't want to.
As you can see... these brownies are a bit different.
They are fudgey, moist, and a lot more dense than a traditional 'cake' brownie. And that's exactly what I was needing in my life today.
From the moment I pulled these from the oven, my mom was hovering over my shoulder. I wasn't sure I would be able to take all the pictures I needed before she managed to steal one. Thankfully, she behaved herself just long enough.
Be prepared, these will go fast!
Skinny 3 ingredient Pumpkin Spice Brownies

The Skinny:
Servings: 9 • Size: 1 Brownies • Calories: 280.6 • Fat: 6.4 g • Carb: 52.9 g • Fiber: 3.5 g • Protein: 2.5 g • Sugar: 1.3 g • Sodium: 1.8 mg
Ingredients:
19 Oz. Box Brownie Mix (I used an all natural boxed brand.)
1 (14.5 Oz) Can or 1 1/2 C. 100% Pumpkin Puree (Not Pumpkin Pie Filling!)
1 Tsp. Pumpkin Pie Spice
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8 or 9x9 baking pan with non-stick baking spray.
Combine all of the ingredients together in a large bowl until well blended.
Do NOT follow the instructions on the brownie box, just use the dry mix.
Pour the batter into the prepared baking dish.
If you are obsessed with sprinkles as much as I am... toss some sprinkles on top too!
Place the dish into the oven and bake for 35-45 minutes or until an inserted toothpick comes out pretty much clean.
Remove from the oven and allow to cook slightly.
Cut into 9 equal squares and enjoy!
