I'm a huge fan of mimosas. It's one of my most favorite brunch drinks! I think the first time that I ever had one was many many years ago on my parent's boat on one of our Sunday-Funday weekend excursions around the local lake at the time.
Love at first sip!
So what in the world is a mimosarita? Well, since I'm sticking with my Cinco di Mayo theme this week so I didn't want to go for the typical mimosa or margarita. Instead, I decided to go with a mimosarita! So what is that? It's basically a combination of a mimosa and a margarita; made with limeade instead of orange juice. The best of both worlds.
Now, how is this at all skinny? Well, I used organic, local, fresh limeade with no sugar added. Hah! At least that makes it a tad better than using some sort of mix or pre-made some such.
It makes me feel better anyway.
Besides, at less than 150 calories a drink I think it deserves the title of skinny.
I've made this recipe easy to double, triple, etc. So naturally it would make a perfect carafe or pitcher for a large brunch or even a party!
When I'm making these for just one or two though, I like to buy the individual bottles of champagne so nothing goes to waste.
