One of my favorite 'sub' sandwiches is an Italian or a 'Grinder'. It's usually loaded with Italian meats such as salami and pepperoni, provolone cheese, and plenty of vegetables including tomatoes, olives, pepper rings and lettuce. Yum! It's a powerhouse of bold flavors with lots of zest and zing! Flavor, flavor, flavor.
So, today I decided to turn that favorite sandwich of mine into a salad. Why? Mostly because we're getting into the high end of the heat index here in Texas now and I don't even feel like toasting bread for fear of adding heat to the house. Yes, I'm absolutely serious about that.
To make this salad, I started out with a bed of chopped kale, romaine, radicchio, and some herbs. I then topped that with everything I'm used to seeing on my 'Grinder'. This salad was my lunch this week, but it would also make a great appetizer or side dish to an Italian style meal such as spaghetti or lasagna. I've left the recipe below easily halved (for appetizers/sides) and just as easily doubled or tripled (for a family or large group.)
I should note too that I got several thick slices of salami cut from the deli section at the grocery store and then cut them down into cubes. But, thin sliced salami will of course taste the same though it may not be as easy to eat mixed with the salad.
Italian 'Sub' Salad

2 C. Chopped Romaine & Kale Blend
4 Cherry/Grape Tomatoes, Halved
1 1/2 Oz. Hard/Dry Salami, Cubed
2 Tbsp. Pepperoncini Rings/Slices
2 Tbsp. Italian Dressing of Choice (I used Brianna's Home Style Italian Vinaigrette.)
1 Tbsp. Shaved Parmesan Cheese
Place the lettuce into a bowl and top wth the tomatoes, salami, pepperoncini and dressing.
Toss to coat evenly with the dressing.
Sprinkle the cheese over the top and enjoy right away!
