For me homegating is the way to go with any sport. Who doesn't like tailgating from the comfort of home? It's the best of both worlds! I get to watch my favorite teams live on television without the hassle of the hustle and bustle of crowds, lines, and over priced concession stand foods. Of course, to me, that's the best part - creating my own game day grub!
I always strive to put my own fun and healthful twist on what some might consider traditional. Fries and dips are always a staple of any good game day spread. So, today I give to you these rather guilt free, sophisticated, fiber full sweet potato fries.
My inspiration for this dish started with a stuffed sweet potato that I made a few weeks back. I had loaded a baked sweet potato up with sautéed spinach, black beans, and some homemade green goddess dressing. It was definitely not your typical baked potato, and was amazingly delicious. So, when I was deciding what to do with my Alexia Sweet Potato Fries, I had the perfect direction to start heading in.
I wanted to take a more classy mediterranean detour today, so I swapped the black beans I had used in my original stuffed sweet potato for chickpeas and added a bit of feta into the mix to give that sharp bite of added flavor.
We're pretty passionate here in Texas about our sports teams. I think between my mom and I, we own just about every piece of clothing that is offered in support of our favorite local team. Naturally, I had to get some burnt orange and white on the plate here to show my team pride as well. Hook'em!
What can I say? I bleed Texas orange!
And what about this homemade green goddess dip? It's amazingly de{light}full! Seriously, I've pretty much fallen in love with this green goddess dressing. It's one of those eye-rolling, toe-curling, mouth watering dips that you can barely stop yourself from eating straight out of the bowl with a spoon. What's better is that it's super easy to make and lasts for a few days in the refrigerator.
Sometimes you just need a nice dip that's a little more fancy than a traditional ketchup to go with your fries on game day.

Loaded Green Goddess Sweet Potato Fries

Ingredients:
Green Goddess Dip/Sauce:
1/3 C. Avocado
1/4 C. Green Onions, Chopped
2 Tbsp. Fresh Tarragon, Chopped
2 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Fresh Lemon Juice
2 Tbsp. Light Mayonnaise
2 Tbsp. Fat Free Plain Greek Yogurt
1 Garlic Clove
Salt & Pepper to Taste
6 Oz. Alexia Sweet Potato Fries
3 Oz. (About 2 BIG Handfuls) Fresh Baby Spinach
1/2 C. No Salt Added Chickpeas/Garbanzo Beans, Drained & Rinsed
1/4 C. Italian Cheese Blend
1/4 C. Reduced Fat Feta Cheese Crumbles
Directions:
Preheat the oven to 425 degrees F. and line a baking sheet with foil or lightly coat the inside of an oven safe skillet with non-stick cooking spray; set side.
While the oven is heating up, combine the ingredients for the green goddess sauce into a blender or food processor and blend until smooth.
Feel free to add water 1 tbsp. at a time if the dip is too thick.
I ended up adding about 1/4 c. of water to get my desired consistency.
I found my lovely Alexia Sweet Potato Fries in the 'Vegetable' and 'Frozen Meals' aisle towards the very end of the row. Though their placement may vary by store.
Place the fries onto the prepared baking sheet or skillet and place in the oven to bake for 10-12 minutes or until starting to brown and crisp.
While the fries are baking, place the spinach and chickpeas into a large skillet and sauté just until the spinach has wilted and the garbanzo beans are warm.
Remove the fries from the oven once ready and top them with the spinach, garbanzo beans, shredded cheese, and feta.
Place it all back into the oven and bake for another 2-4 minutes or until the cheese is melted.
Carefully remove the pan from the oven and drizzle with a bit of the prepared green goddess sauce.
Serve any remaining sauce on the side for dipping.
Enjoy right away!
