Winter Berry & Citrus Salad (With Black Berry Vinaigrette)

Just because it's winter, doesn't mean you can't enjoy a salad! This Winter Berry & Citrus Salad with Black Berry Vinaigrette is full of winter fruits and flavors to satisfy you on even the coldest and gloomiest of days. I mean... look at those glorious bright colors there, it's a sure-fire way to climb your way out of the winter blues with some winter greens! Hah! See what I did there?

The deep red and green here make me think that this would make for a perfectly seasonal dinner salad or festive side salad to a Holiday meal. What I love most about this salad is that the dressing is completely homemade and super simple to make too!

The Black Berry Vinaigrette here is literally made with 6 ingredients at the very most (and that's including the salt and pepper!) Like I said, it's a super simple and flavorful way to impress friends and family with minimal effort.

To make this salad even more wholesome, I loaded up some local greens with fresh mandarins, even more black berries, feta, dried cranberries, and pepitas (pumpkin seeds!) I'm all about shopping small and locally when I can, especially when it comes to food and even more when it's produce! For me, I just think it tastes better and feels better.

I enjoyed this salad as a lunch, but it would also make a really good side for a protein at dinner. Or even just topped with some off with some meat. I'm thinking... steak or some sort of oven-roasted chicken. Mm, yes please!

If you want to make this more of an 'appetizer' style salad, you'll divide each potion into half, giving you 8 servings instead of the original 4 that I have listed below.

The Skinny:
Servings: 4 • Size: 1 Prepared Salad • Calories: 328.9 • Fat: 19.8 g • Saturated Fat: 3.4 • Carb: 35.7 g • Fiber: 9.0 g • Protein: 8.0 g • Sugar: 26.0 g • Sodium: 287.8 mg

Ingredients:
Black Berry Vinaigrette:
6 Oz. Fresh Black Berries
1/4 C. Extra Virgin Olive Oil
3 Tbsp. Red Wine Vinegar
1 1/2 Tbsp. Honey
Salt & Pepper to Taste

Salad:
8 C. Greens/Lettuce
6 Oz. Fresh Black Berries
4 Mandarin Oranges, Peeled
1/4 C. Reduced Fat Feta
1/4 C. Pistachios
1/4 C. Dried Cranberries

Directions:

Combine the 6 Oz. Fresh Black Berries, 1/4 C. Extra Virgin Olive Oil, 3 Tbsp. Red Wine Vinegar, 1 1/2 Tbsp. Honey, and Salt & Pepper to Taste in a food processor, blender, or cup for an immersion blender.

Puree down to create your dressing; place in the fridge to chill until ready to use.

Feel free to strain out the black berry seeds if you desire.

Plate each of your salads with 2 C. Greens/Lettuce, 6 Oz. Fresh Black Berries, 4 Mandarin Oranges, 1/4 C. Reduced Fat Feta, 1/4 C. Pistachios, and 1/4 C. Dried Cranberries.

Top with the black berry vinaigrette divided evenly among plates.

Serve and enjoy right away!
