Whole Wheat Sugar Cookie Bars
In the midst of chaos, I managed to get my hands on some pretty sprinkles! And what does a girl do with sprinkles? She bakes up a sweet treat and uses the sprinkles for decoration! These Whole Wheat Sugar Cookie Bars are perfectly delicious while being made just a little better-for-you by using whole wheat flour and some natural sweetener in place of sugar.
The best part is, you still get frosting with these cookie bars! Yep, that’s right, these thick, fluffy cookie bars are topped with what I think is a perfect layer of homemade frosting. Not too thick, not too thin, and adds just the right amount of sweetness.
It’s important to note that yes these are thick sugar cookie bars. Nothing like a cookie. In fact, they’re much more like a sugar cookie in the form of a cake! The texture is more like that of a sugar cookie though with some crunch on the outside and softness on the inside.
To match our sprinkles, my daughter decided that a light blue frosting was the best choice. And as you can see, she was probably right! But feel free to color your frosting however you’d like to match your own sprinkles. We literally only used 2 drops of food coloring to get this light blue hue.
