It's meatless Monday and we're rolling it over into taco Tuesday! No matter when or where you have these Vegetarian Crunchy Tacos, you're sure to love them. For the past couple of months we've had 'Taco Tuesday' for dinner in my house, and I'll be honest in saying that I've tried out several different variations of tacos among all of those Tuesdays. However, none can quite compare to the traditional and classic crunchy taco.
Until now, that is.
These meatless tacos are every bit as good (if not better) than the original. They are stuffed full of all of the flavor and toppings that you know and love in a traditional crunchy taco with one thing missing. Meat! Don't worry thought, it's been swapped out for something amazing.
Yum! To keep these lightened up, I of course swapped the meat out for the griller crumbles. I also used a reduced fat cheese, lightened guacamole, and plain fat free greek yogurt instead of sour cream.
At the end of it all, these tacos were amazing and will make a great meatless Monday or taco Tuesday meal! You can add the guacamole or some avocado, but I've left that as an optional topping here.

Ingredients:
12 Taco Shells
1 (16.2 Oz.) Pkg. MorningStar Farms® Grillers® Crumbles™
1/4 C. Great Value™ Frozen Corn
1 Tbsp. Salt-Free Taco Seasoning
1 C. Green Leaf Lettuce
1 C. Fresh Pico
1 C. Reduced Fat Shredded Cheddar
1 C. Reduced Fat Plain Greek Yogurt
Salt & Pepper to Taste
Optional: Guacamole or Avocado
Directions:
Bake the taco shells according to the package directions.
While the taco shells are baking, lightly coat the inside of a large skillet with non-stick cooking spray. Place the 16.2 Oz. MorningStar Farms® Grillers® Crumbles™, 1/3 C. water, and 1/4 C. Great Value™ Frozen Corn into the skillet. Cover and heat over medium-high heat for 4 minutes.
Uncover and add in the 1 Tbsp. taco seasoning and reduce the heat to medium to cook for another 4 minutes, stirring occasionally.
I found MorningStar Farms Grillers Crumbles and Great Value Frozen Corn in the frozen section of my local Walmart. Don't forget to take advantage of the Ibotta offer!
Once the taco shells and griller crumbles are done, load up each taco shell with about 1/4 C. of the crumble/corn mixture.
Top each taco accordingly with about 1 Tbsp. of each the lettuce, pico, cheese, greek yogurt, and avocado or guacamole if desired.
Serve right away and enjoy!
