The Forking Skinny Dinner Plan (Week 13)

Below is this week's dinner plan!

These dinner plans are based off of a 4 person family and include the meal plan and shopping list for your convenience.

I've also created the shopping list with the notion that you have basic spices and pantry/kitchen staples on hand. So, you'll want to double check the recipes and the shopping list to be sure that you have everything you need.

Skinny Fork Dinner Plan (Week 13)

Monday: Healthified Crock Pot Teriyaki Chicken Bowls
Tuesday: Crock Pot Pork Chile Verde
Wednesday: Cheesy Spinach & Kale Verde Enchiladas + Reduced Sodium Black Beans
Thursday: Leftover Crock Pot Pork Chile Verde
Friday: Kid's Choice 'Family' Night!
Saturday: Pizza Night!
Sunday: Healthified Turkey Cuban Sandwich + Baked Veggie Chips


Shopping List:

Healthified Crock Pot Teriyaki Chicken Bowls:
2 Lb. Boneless Skinless Chicken Breast
1/2 C. Onion
1/2 C. Agave (Honey works too!)
1/2 C. Reduced Sodium Soy Sauce
1/4 C. Rice Wine Vinegar
2 Garlic Cloves
1 Tbsp. Fresh Ginger
1/4 C. Cold Water
3 Tbsp. Cornstarch
3 C. Cooked Rice
3 C. Broccoli Floretes
1 1/2 C. Carrot Slices

Crock Pot Pork Chile Verde:
2 Lb. Pork Tenderloin, Trimmed of Fat & Cubed
1 (10 Oz) Can Diced Tomatoes with Green Chiles (RoTel)
1 (7 Oz. Can) Chopped Green Chiles
1 Medium White Onion
1/2 C. Reduced Sodium Chicken Broth
1 Jalapeno
2 Garlic Cloves

Cheesy Spinach & Kale Verde Enchiladas:
1/2 Large Yellow Onion
1 (15 Oz.) Can Verde Enchilada Sauce
6 Oz. Stubb's Green Chile Anytime Sauce (Or more Verde Enchilada Sauce.)
1 Tbsp. Whole Wheat White Flour
10 C. Baby Kale & Baby Spinach Blend
1 Garlic
1 1/2 Tsp. Taco Seasoning
8 Whole Wheat & Corn Tortillas
1 1/2 C. Reduced Fat Shredded Mexican Cheese Blend
1 1/2 C. Fat Free Shredded Cheddar Cheese
Reduced Sodium Black Beans

Healthified Turkey Cuban Sandwich:
8 Slices Whole Wheat Bread (Mine were 40 cal. per slice.)
8 Oz. Roasted Turkey, Sliced Thin
8 Oz. Reduced Sodium Deli Ham, Sliced Thin
4 Swiss Cheese Slice
8 Stacker Pickles
Baked Veggie Chips
