Skinny Summer Breakfast Parfait

I love a good parfait, especially for breakfast! Parfaits are the perfect summer time breakfast. Why? Because you don't have to heat up or cook anything, which is a pretty big deal here in the southern states when we start pushing 100 degrees. Every little thing will set off that expensive air conditioner bill. Yikes! Let's not do that...

This beautiful little breakfast is the perfect way to start off your day; keeping you full, satisfied, and so happy! I mean just look at all those fun bright colors. How could you not get a smile on your face with eating that rainbow?

I'm calling this the 'summer' breakfast parfait because I got all these fruits in my most recent local produce box; it's always full of the most in season, ripe, delicious fruits and vegetables from our local farms here in central Texas. Since it's nearly officially summer, it's the 'summer' breakfast parfait.

Normally mango wouldn't be on my 'favorite fruits' list, but I was extremely happy with mine today. I actually enjoyed it more than my peaches, which is a pretty big deal considering I love peaches. Perhaps that's because I'm a summer baby.

Yeah, the post today is a little short winded since I'm getting things ready to go for my birthday this coming weekend. It's the big 3-0 this year. Yep. Dirty-thirdies here I come. Yes, I also share my birthday many times with father's day and also the first official day of summer. This year, however, I've told all the father's in my life to pick another day. This is my day this year, boys. Sorry! Hehe.

If you're going to pack this as a breakfast to-go, you'll want to keep most of the components separate from one another; the granola will likely get soggy if it isn't eaten right away and sits too long.

Ingredients:
1/4 C. Low Fat Granola
5.3 Oz. Fat Free Vanilla Greek Yogurt
1/4 C. Peaches, Diced
1/4 C. Blackberries
1/4 C. Mango, Peeled & Diced

Directions:

Layer your ingredients in no particular order.

Enjoy right away!
