Strawberry Shortcake Energy Bites
Is it just me or is May one of those months where you're running around like a crazy person the most? Maybe it's because we're just ahead of summer break for the kids and everything is winding down. It's the sprint to the finish line and it is not for the faint off heart!
I know that for me, it's been one thing after the other. Every day there seems to be something important that NEEDS to be done. On top of all of that, I've been getting back into the swing of exercising. So right now, more than ever, my body is craving energy; every from good food and proper rest. That's why I decided to make myself these Strawberry Shortcake Energy Bites.
So you know those energy bites at the store that are crazy expensive? Yeah. This is sort of a take on those but cheaper, fresh, and versatile. These energy bites are delicious and so SO easy to make. They are stupid simple and pretty much fail-proof. There's only 5 ingredients in there, and they aren't baked, so it's pretty hard to mess them up.
I'm calling them strawberry 'shortcake' because they look and take a lot like a strawberry shortcake. And even remind me of the strawberry shortcake ice cream popsicles that ice cream trucks used to carry!
I think next time I'll try these with another berry or maybe even a different nut! My mind is swimming with the possibilities of different variations.
Make these ahead on the weekend to have some grab-n-go bites on hand through out the week. They're perfectly portable and popable for even the busiest of people!
