Strawberry Pop-Tart Overnight Oats

Just a few more weeks and my kiddo will be out for summer. And these last few weeks are always super DUPER busy. In order to avoid skipping out on breakfast in the morning, I like to have a few things on hand that I can grab-and-go eat with no excuses and no guilt. That’s where these Strawberry Pop-Tart Overnight Oats come into play.

Overnight oats are tasty, easy to make, and an excellent thing to meal prep. The oats themselves are left overnight in a mixture of almond milk, greek yogurt, some sweetener, and real-deal cake batter flavor. They’re also stuffed full of strawberry goodness and then topped off with a drizzle of frosting and even rainbow sprinkles!

Of course, these oats are lightened up with the almond milk instead of regular. They’re also made with natural sweetener and fruit! The greek yogurt gives a little boost of protein and a tang. And yes, the frosting on top is pretty much required since that’s what helps give that pop tart taste and feel!

These are great for breakfast, lunch, or even dessert! It’s a fun and easy way to make sure you stay on track even on the busiest of days.
