Skinny Strawberry Pop-Tart Cobbler
Sometimes… you get a wild idea and you just have to go with it. This Skinny Strawberry Pop-Tart Cobbler was definitely one such idea. I had come across a fun idea for a strawberry pop-tart pie, but.. to be completely honest with you, homemade pie crust scares me. So, I started to think back to this summer when I made a few delicious and easy cobblers. Then BOOM lightening struck and the world made sense.
…Why not make the strawberry pop-tart into a cobbler instead?
If you’ve ever had a pop-tart before, then you know you’re in for a big treat here. The strawberry ‘filling’ part of this cobbler is meant to taste just like the strawberry ‘filling’ that you’d find in a pop-tart.
The top part of the cobbler is glazed lightly, just like a pop-tart too! Of course, in doing my research of pop-tarts, I did manage to find that there are a lot of myths, thoughts, and ideas as to what the ‘sprinkles’ on top of the pop-tarts actually are. I saw everything from sprinkles to crushed up fruit loops.
I decided to use my best judgement and went with crushed up rainbow sprinkles, and I think it worked out pretty damn perfectly. But, I left that part as an optional topping since it’s not entirely needed. …I wouldn’t skip it though, since it definitely makes the cobbler look more like what it is!
Really, y’all… this Skinny Strawberry Pop-Tart Cobbler is delicious! Normally I like my cobbler with a little bit of vanilla ice cream on top, but I couldn’t manage to separate myself away from the bowl of yummy goodness long enough to scoop any.
