Strawberry Champagne Vinaigrette
With Valentine’s Day on the horizon, I thought it would be fun (and delicious) to make a pink salad dressing. Not just any dressing though, something lightened up and perfect as we come into the end of the cold winter months. Maybe using spring inspired flavors will inspire the warmer weather!
So what makes the dressing pink? Strawberries of course! Strawberries are the base of this vinaigrette, and to be honest, they’re the secret to this dressing as well. The large amount of strawberries used here is what keeps this vinaigrette lightened up and low in calories.
You might think that a strawberry based dressing just sounds odd. But I promise you that it tastes amazing. It’s a power bomb of sweet and tangy flavors that go great on a simple salad of greens and other red and pink fruits.
I served mine with pink lady apples, raspberries, more strawberries, and pink grapefruit segments. All over a bed of greens with some reduced fat feta crumbles on the top. In the end I had a beautiful pink and red salad to bring in the month of LOVE with.
This salad keeps for about 3 days in the fridge, so you’ll want to use it up a little more quickly than you would most dressings. That’s just because there’s loads of fresh fruit in there!
