'Starbucks' Chicken & Hummus Bistro Box

I really debated on whether or not I should add 'skinny' into the title here, but decided not to since this recipe actually has more calories in it than the one you will find at Starbucks.

And... let me tell you why.

It has a lot more veggies and a bigger allotment of chicken so that it's more of a meal rather than the snack portion you will get from the popular chain.

I swapped out the pita bread for pita crisps and a leaf of lettuce, and also used a slightly different variety of veggies to suit my tastes. As I mentioned before... I'm not a fan of cucumber, which is what you'll find in Starbucks' version.

The lettuce leaf could be left out, but I thought it was a good way to make a lettuce wrap around the chicken with some of the veggies and hummus!

This is a great little lunch and could easily be packed up and tossed into a lunch box! I cooked up the whole chicken breast and extra veggies so I will have everything ready and on hand tomorrow for my lunch. Easy!

The Skinny:
Servings: 1 • Size: 1 'Bistro Box' • Calories: 253.8 • Fat: 8.6 g • Carb: 25.7 g • Fiber: 7.7 g • Protein: 23.2 g • Sugar: 3.9 g • Sodium: 509.1 mg

Ingredients:
1/2 Medium Chicken Breast (About 3 Oz.), Cut into Tenders
Salt & Pepper to Taste
1 Large Celery Stalk, Sliced
1/2 C. Fresh Carrots, Sliced
1/2 C. Fresh Broccoli Florettes
2 Tbsp. Hummus (I used Roasted Red Pepper.)
5-6 Pita Crisps (1/2 Serving)

Directions:

Preheat your grill (if needed) and season the chicken with salt & pepper to taste.

Grill until cooked through.

I cooked up the whole breast and saved the rest for lunch tomorrow!

Plate everything up together and enjoy!
