Skinny Eggs Florentine Breakfast Tacos
Breakfast is the one meal of the day that I tend skip most often. I think it's just... somehow easily lost in the shuffle of life and missed somewhere between getting up and ready or rushing around to get my little girl out the door and off to school.
I have found that if I have a breakfast in mind that is planned, easy, tastes amazing and is somewhat portable... I have no excuse to miss out on the most important meal of the day.
These have been my go-to breakfast for about two weeks now. After all, how do you say no to bacon and eggs? Easy. You don't!
I am rather fond of adding milk in with my scrambled eggs for some added calcium and a boost of fluffiness. But, lately I stumbled across a little trick. Instead of milk, add in some cottage cheese to add flavor and protein!
By the way, my super picky toddler never notices that there was anything different added to these eggs, which is great since I've always looking for ways to get more protein in her. She's not exactly a meat eater.
I also wanted to add in some baby spinach, because well... I love spinach, it's healthy, and think it should be a necessity at every meal!
To make it even better, I stumbled across the most amazing tortillas a while back. They are white whole wheat and only 50 calories each. Perfect.

The Skinny:

Ingredients:
2 Large Egg Whites
1 Whole Large Egg
2 Tbsp. Low Fat Cottage Cheese
1 C. Fresh Baby Spinach
Salt & Pepper to Taste
2 White Whole Wheat 'Soft Mini Wrap' Tortillas (50 Calories Ea.)
2 Slices Center Cut Reduced Sodium Bacon, Cooked
Directions:
Lightly spray a small skillet with non-stick cooking spray. Combine the egg whites, egg, cottage cheese, and salt & pepper together in the skillet.
Cook the egg mixture over medium heat until nearly done.
Add in the baby spinach.
Continue to cook until the leaves are starting to wilt.
Once done, remove from the heat.
Build your tacos!
Place a slice of bacon over each tortilla and top with half of the eggs.
Serve warm and enjoy!
