Skinny Spinach Dip (AKA Seaweed Dip)
This summer I decided that my daughter and I were going to up our summer game by having a different 'themed' week for all 10 weeks. We've got arts, crafts, and even some recipes planned to make in accordance with each theme. Our first week is going to be 'ocean' themed! We'll be going to a water park, the aquarium, and learning a lot bout the ocean.
Of course, it doesn't stop there. I really wanted to involve the kitchen in our weeks of fun too. Being as we aren't really seafood lovers here in this house, it's been more than a little tricky to find 'ocean inspired' recipes to create that are kid friendly and not seafood. This Skinny Spinach dip was my first idea!
Since we're going with an ocean theme this week, I'm calling it 'seaweed dip' around the house this week. It's just a fun play on the idea that it looks like there is seaweed in the dip.
The idea for this recipe comes from one of my favorites that you can buy at my local grocery store (which funny enough... is based off another one that includes a pre-mixed packet. And... we all know how I feel about those. Yuck!)
So, when making my dip here, I wanted to be sure to cut all that stuff out while leaving it as simple and easy as possible. You know... kid-friendly to let them help in the kitchen!
Honestly, I wasn't expecting much flavor wise, but the end result was actually pretty spot on with one you can buy - just a whole lot better for you!
This dip is a great partner to go along with raw fresh veggies or even a few crackers perhaps.
