Skinny Mixed Berry Cobbler

A few weeks back I was sent a Wilton Armetale Casserole/Baker, at no charge to me, to try out and give my honest opinion on. Since today starts up March Madness, I wanted to do something inspired by Tailgating!

Of course, there were the usual suspects... but, I wanted to do some dessert since I feel that it's a severely overlooked additional to any proper Tailgating experience.

Since I wanted the dish to be Tailgating friendly it had to be something that could be prepared a few hours in advance, was versatile, and could be cooked on the grill just as easily as it could be in the oven.

With my new Wilton Armetale Casserole/Baker... I got to work on trying to come up with the perfect Tailgating dessert.

Ahah! What would be better than a homemade cobbler? Nothing!

Afterall, I've seen cobblers done on the grill in a skillet before, so why wouldn't the same idea work just as well in my new dish?

First thing first. I wanted the cobbler to be full of berries. All sorts of berries. Lots of berries. I also wanted a dough that was easy to pull together and didn't overwhelm the fruit, just add to it.

I used mostly whole wheat flour and substituted some blended oats in for part of it to add flavor, texture, and some more nutritional value. Plus, oatmeal is lower in calories than flour. Saving over 100 calories cup-for-cup.

The results were a hit! Even my dad, who is by no means a dessert fan, gave me a thumbs up. And my brother, who doesn't care for any sort of 'hot fruit', ate his share without complaint as well.

The berry mixture was tart and tangy while the dough cut through it with just enough sweetness. Perfect!

My new Wilton Armetale Casserole/Baker was a great dish to use. I love how versatile it is, able to be used in the oven or the grill. It seemed to cook everything evenly and kept the cobbler warm for much longer than a standard baking dish. The cobbler cleaned up easily with warm water and soap. While the pan is very durable... be sure not to toss it in the dishwasher!

The Skinny:
Servings: 8 • Size: 1/8th • Calories: 198.8 • Fat: 4.2 g • Carb: 38.4 g • Fiber: 5.7 g • Protein: 3.3 g • Sugar: 15.6 g • Sodium: 297.5 mg

Ingredients:
Berries:
2 Tbsp. Granulated Sugar
2 Tbsp. Stevia in the Raw (Or other sweetener.)
2 Tbsp. Corn Starch
7 C. Mixed Berries (I used frozen-thawed, cherries, black-blue-raspberries, and strawberries.)

Dough:
2/3 C. All-Purpose Flour
1/3 C. Whole Wheat White Flour
1/3 C. Quick Oats (I blended mine down to more of a flour.)
2 Tbsp. Granulated Sugar
2 Tbsp. Stevia in the Raw (Or other Sweetener.)
1 1/2 Tsp. Baking Powder
1/2 Tsp. Salt
5 Tbsp. Cold Unsalted Light Butter, Cubed
1 Tsp. Vanilla Extract
1/4 C. Fat Free Milk

Directions:
Preheat the oven or grill for 400 degrees F. and lightly spray the inside of a 13x9 baking pan with non-stick cooking spray.

Whisk together the sugar, sweetener, and cornstarch together in a small bowl.

Add the berries to a large ziplock bag or even a large bowl.

Sprinkle the berries with the sugar mixture or toss lightly until the berries are all evenly coated with the sugar mixture.

Transfer the berries to the bottom of the prepared baking dish and set aside.

Whisk the flours, oats, sugar, sweetener, baking powder and salt together. Add in the butter and combine until starting to form a grainy texture.

Add the vanilla and milk to the mixture and stir until just combined into a sticky dough.

Scoop the dough up into rounded spoonfuls and use your fingers to flatten out slightly into rounded 'biscuits'.

I had some left over so I just crumbled it and sprinkled it over the top of the berries... which in hindsight would probably work just as well for ALL of the dough for the cobbler.

Place the cobbler into the oven or grill and bake for 20-25 minutes or until the dough is cooked through and starting to brown on the edges.

Once done, remove from the oven or grill and allow to cool slightly before serving.
