Skinny Lemon Berry Waffles (Cake Mix)

I've said it before, and I'll say it again... dry cake mix can be so much fun to play around with! 

It's been a really busy few weeks, and the next several to come aren't looking to be any less daunting. Fun. But, exhaustive. I think that must be how we all feel about the summer though, right?

These waffles are super easy and so fantastic! No one will ever guess that they came from a boxed cake mix.

After all... who would have thought that was even possible? I know I didn't!

Lemon and berries are one of my favorite summer-y fruit combinations.

The bright and sunny taste of a lemon keeps things fun while the sweetness of the berries keep your tastebuds grounded.

The Skinny:
Servings: 10 • Size: 1 Waffle • Calories: 177.3 • Fat: 3.6 g • Carb: 40.1 g • Fiber: 2 g • Protein: 3.7 g • Sugar: 4.3 g • Sodium: 356.1 mg

Ingredients:
1 Box Sugar Free Yellow Cake Mix
6 Oz. Fat Free Lemon Greek Yogurt (I used Chobani.)
2 Egg Whites
1 1/3 C. Water
1 1/2 Tsp. Vanilla Extract
1 Lemon, Zested & Juiced
 
1 C. Strawberries, Halved
1 C. Blueberries
Powdered Sugar (Optional Topping)

Directions:
Heat up your waffle maker. While it's heating, mix together the cake mix, yogurt, egg whites, water, vanilla and lemon zest.

Lightly spray your waffle maker with some non-stick cooking spray. Scoop the batter into your waffle maker and use just as you would any other waffle batter.
 I used my counter top grill with about 1/4-1/3 c. scoops of batter.

Plate the finished waffles and top with about 1 1/2 tbsp. strawberries, 1 1/2 tbsp. blueberries and a squeeze of fresh lemon juice. Dust with some powdered sugar if desired. Ta-da!

Enjoy all the smiling faces (even if they decide that they don't like blueberries all the sudden.)
