Simple & Clean Summer Spaghetti

This is a super simple summer dish that's light, full of flavor, and comes together in all of 15 minutes! There is barely any cooking required. I promise!

Sure. These noodles don't look saucy... but they taste amazing and are absolutely perfect to end a hot summer day with.

Don't be scared. I realize that the tomatoes in this are not cooked. That's what keeps this dish so fresh and perfect for summer! Of course, the lemon and fresh basil don't hurt either. 

I wanted some spaghetti in my life this week, but didn't want to hang out over the stove or spend time preparing for a heavier robust sauce in the crock pot. I just didn't have the time today. I tell you... summer is crazy!

I spent the vast majority of my day checking out a few local preschools for my little darling princess. I've been a stay-at-home, work-at-home, blog-at-home mom since she was born, and it's high time that she gets socialized with humans her own age.

Needless to say, I'm pretty brain fried this evening... so simplicity is bliss!

Thankfully I believe a preschool has been settled on and I hope to have a lot more time on my hands in the next couple of weeks to start focusing and working all the more diligently on my recipes!

The Skinny:
Servings: 4 • Size: 1/4 • Calories: 291.1 • Fat: 9.2 g • Carb: 52.1 g • Fiber: 6.1 g • Protein: 6.2 g • Sugar: 4.3 g • Sodium: 255.9 mg

Ingredients:
2 C. Cherry Tomatoes (I used a mix.), Halved
1/2 C. Kalamata Olives, Pitted
2 Garlic Cloves, Minced
1/2 C. Fresh Basil
1 Tbsp. Red Wine Vinegar
1 Lemon, Juiced
2 Tbsp. Olive Oil
Salt & Pepper to Taste
8 Oz. Whole Wheat or Veggie Spaghetti

Optional Toppings: 
Crumbled Feta

Directions:
Toss the tomatoes into a medium bowl.

Using clean hands or a potato masher,  carefully smash the tomatoes to get some of their juices out.

Add in the remaining ingredients, except for the pasta and give it all a stir.

Set it aside for at least 10 minutes.

This is a great time to cook your spaghetti noodles. Follow the package directions for al dente. 

Once the noodles are done, quickly drain them and toss them in a large bowl along with the tomato mixture. 

Divide evenly among four plates and serve immediately. 

Top with some crumbled feta if you're feeling feisty!
