I'm a southern girl, so cobbler is in my blood and I'm pretty sure that cast iron is part of my very fiber. What's funny is that I actually got my current cast iron, which belonged to my parents, by total accident; it was left over at my house and they needed one so they were forced to buy a new one and I got to keep the one left behind. Score!
There isn't much better than a pre-used and well seasoned cast iron, any southern girl will tell you that! Okay, except maybe cobbler. Cobbler is greater than cast iron. It actually seems like one of the first things that the grill master of the family makes in his new cast iron products, whether it's a skillet or a dutch oven.
This is yummy stuff right here! Plus, I love the fact that I know exactly what's gone into it. This cobbler can be made in the oven or even in the grill; which is usually how my dad does it and how I do it when it's just too hot outside to turn the oven on.
Thankfully, it's cooling off here a little bit (it's only 100 degrees F. at the end of August - that's cool for us), so I braved turning the oven on in the middle of the day to make this. It was totally worth it too. Delicious, crispy, creamy, tart, and sweet - everything I want in a cobbler and so much more!

The Skinny:

Ingredients:
Cobbler:
2 C. Berries, Fresh or Frozen
2 Tbsp. Pillsbury Purely Simple Frosting Mix
1 Tbsp. Natural Sweetener (Such as Stevia in the Raw)
1/2 Box (About 1 1/2 C.) Pillsbury Purely Simple White Cake Mix
1/2 Stick (4 Tbsp.) Light Butter
Frosting Drizzle:
1/2 (13.2 Oz.) Bag Pillsbury Purely Simple Frosting Mix
1/2 Stick Light Butter
3 Tbsp. Water
Directions:
Preheat the oven (or your grill) to 350 degrees F.
Combine your berries with the sugar and sweetener and transfer into the bottom of your oven safe skillet or cast iron baking dish.
Whisk together the cake mix and the butter into a crumbly mixture.
Sprinkle over the top of the berries.
Place into the preheated oven (or grill) and bake for about 40 minutes or until the berries are bubbling and the dough is browned on top.
While the cobbler is cooking, combine the frosting mix with the butter and water.
Feel free to add more water 1 tsp. at a time to get the proper 'glaze' and 'drizzle' consistency.
Carefully remove the skillet from the oven (or grill) and set aside to cool slightly.
Drizzle half of the 'glaze' over the top of the cobbler and serve right away.
