Red White & Blueberry Salad (With Champagne Vinaigrette!)
This year for the 4th of July we've got some visitors in town for a few days. Amidst the usual chaos of the holiday, I thought it was high time to make a fun, easy, little patriotic salad that could be easily tossed together and enjoyed as a festive side or even as lunch!
I basically started this salad off with one of the most easy and tasty vinaigrettes I've ever had. It's simple and so easy to make with just three basic ingredients; plus some salt and pepper! What goes better with celebrating Independence Day other than with some champagne, anyway? Even if it is in the form of a vinaigrette.
The mains of this salad are a basic blend spring mix of greens that are topped with fruits of patriotic colors! Red strawberries, white feta cheese crumbles, and of course some fresh blueberries. It's as simple as that to get natural, bright, beautiful colors to give that 'all American' feel.
It's a fresh and light salad that pairs well with BBQ and can easily be made up ahead of time to have ready to serve to friends and family; giving you less time in the kitchen and more time celebrating!
This is a perfect side salad for any dinner, but could so easily be made into a light lunch by adding on a small piece of grilled chicken if desired.
